
Slow Cooker Anasazi Beans from mindfulplate.com – This is my favorite recipe that I am sharing! Anasazi beans are very similar to pinto beans, and they originated in the Southwest. They cook up so tender and delicious with this recipe. You do have to “babysit” this just a little bit because you have to do something to it every couple of hours. My husband commented that these were the best beans I had ever cooked – and I agree! I’m sure you could use dried pinto beans with this recipe as well. I will definitely be making these again very soon!!

Slow Cooker Chicken Taco Soup from thereciperebel.com – If you like “regular” taco soup, I think you will like this as well. It is a little heavy on the cream, so it’s not necessarily good for you, but it is tasty. And it is literally a dump-n-go recipe. So easy!!

Chicken Teriyaki Noodles from succulentrecipes.com – Nice dish and just as good as take-out! I added mushrooms and onions to it as well. You can pretty much use whatever veggies you like in lo mein.

Meatball and Pasta Bake from justapinch.com – This is a super-easy recipe that is basically like spaghetti and meatballs, but you use spiral pasta instead of spaghetti. It also makes a large portion so that you have leftovers or you have plenty for your family. I actually used frozen chicken meatballs from Aldi and they were delicious – and healthier! It does call for black olives it in. I left those out. I like them, but I did not want them in this recipe.

Slow Cooker Chicken and Stuffing from 4recipe.com – This is a quick and easy recipe that is pretty delicious but is not necessarily the prettiest. It basically tastes like a deconstructed pot pie. A hint that I learned is that you probably want to go ahead and shred up the chicken when it is done cooking and mix everything together before serving. It thickens it up and makes it more appealing. Otherwise it’s a little runny.

General Tso’s Chicken from christieathome.com – We love Asian food, and my husband especially loves this dish. I found this recipe that lets you cook the chicken in the air fryer instead of frying in oil, if you choose, before placing it in the sauce. I will say that you probably want to err on the side of cooking it a little less time in order to check it. I let it get a little dry in the air fryer. It was still really good and makes a good-sized portion for two to three people.

Chicken Scampi with Garlic Parmesan Rice from kitchenwithsara.com – This recipe has the same flavor as shrimp scampi, so it’s more economical to fix and maybe a little healthier. It’s super easy and uses mainly things you probably already have in your pantry and freezer.

Slow Cooker Beef Stew from food.com – This is a recipe I found in a magazine but I also found it online. It is super easy as it uses frozen stew vegetables and there is no cooking involved. You just dump everything in your slow cooker. You can use basically any kind of beef roast or stew meat for this. I do like to add a few more cut up red potatoes to the frozen stew vegetables, and many times I double the recipe to make a larger batch. I also usually use beef broth instead of the red wine.

Creamy Sun-Dried Tomato Chicken Orzo from allnutritious.com from allnutritious.com – I actually made this recipe without the sun-dried tomatoes since my husband is not a huge fan of those, and it turned out pretty well. I would also recommend cutting back some of the basil. In my husband’s words, it was a little “herby”. It was still good, but could do with a little less of that flavor. I also used half and half instead of heavy cream because that it what I had on hand.

Meatballs with Cheese and Marinara also from cushyspa.com – This is another high-protein recipe. You can go ahead and mix up the meatballs the day before if you want to save some time the next night. I think it also increases the flavor. You can cook up some pasta to serve with the extra marinara sauce from the jar that you don’t use for the meatballs.

Baked Shrimp and Broccoli Foil Packets from cushyspa.com – This is a nice, quick weeknight meal. I used frozen shrimp that I thawed. A side of rice – or sticky rice – rounds out this meal. It is also a good recipe if you are looking to up your protein intake without extra calories.

Instant Pot Clam Chowder from simplyhappyfoodie.com – We love having soups when the weather gets cooler. This is a nice and easy recipe for clam chowder that can be done in your Instant Pot fairly easily. It makes a nice amount as well.

Prawn Orzo with Sun-Dried Tomatoes from allnutritious.com – This is another high protein meal. I will say that I used half and half instead of heavy cream, and I thought it was still creamy enough. Also, you may want to cut back on the sun-dried tomatoes a little bit. They are almost a little overpowering, at least to me.

Crockpot Chicken and Dumplings from chefalchemy.com – This is a very hearty dish that is almost more like the inside of a chicken potpie. It does reheat pretty well except that the biscuits that are used for the dumplings get a little mushy.

Lazy Lasagna Casserole from allnutritious.com – I have been trying to add more protein into my diet, and this recipe is a great way to do that. It uses cottage cheese, but you don’t really notice the taste or texture of it if you are not a huge cottage cheese fan. It also makes several large portions.

Chicken Enchilada Rice Casserole from betterhomebase.com – This is not exactly like what I think of when I think of chicken enchiladas, but it is a nice, quick recipe full of Mexican flavors. It also makes a hefty portion. This pairs nicely with an avocado and tomato salad.

Instant Pot Marry Me Chicken Pasta from eatinginaninstant.com – This is a quick weeknight pasta dinner that you can do all in your Instant Pot. It does make a large portion, so be aware of that, and it is a little high in calories since it uses heavy cream for the sauce, but it’s also high in protein.

Grilled Shrimp Bowl with Avocado, Corn Salsa, and Creamy Garlic Sauce from yumfamilyrecipes.com – I used thawed frozen shrimp that had been cleaned and deveined. I also served it over sticky rice. Delicious!

Huli Huli Chicken from knedir.com – We traveled to Hawaii this summer and had to try this while we were there. It’s a sweet and savory grilled chicken. There they serve it with sticky rice and macaroni salad. Give this a try if you like Hawaiian flavors.
